My dad isn’t a big fan of cake, I know he’s a little weird but we love him anyway. It turns out that he does like Jello cake. So for his birthday this week I made a strawberry Jello cake. This is my first ever Jello cake and I’m pretty sure it didn’t turn out quite the way it was supposed to go but it tasted good anyway.
Ingredients:
angel food cake
strawberry Jello
2 cups water
8oz Cool Whip
1 box of strawberries

To be honest I only used 4 strawberries on the cake. The rest were “practice” strawberries, I wouldn’t want to put a sub par berry on my father’s birthday cake.
Make the Jello according to the directions on the back of the box. Let the Jello cool a little before moving on to the next step (I of course did not do this which may have been part of my problem).
Use a wooden spoon to poke holes in the cake. I found it easier to twist the spoon a little so it would go through the cake instead of smashing it. I added a few extra holes with a knife which made for interesting lines later on. When you’re putting holes in your cake be careful not to go all the way through to the bottom of the cake (I’m pretty sure this was where I made my real mistake).
Pour the Jello into the holes on the cake. When I did this the Jello went right though the cake and into the pie plate under it. Nothing really stayed in the cake. I put the cake in a different pie plate and put it in the fridge. I was told later on that I should have left the cake in the original pie plate so it could soak up the extra Jello. I know, I should have thought of that but I was a little off my game Tuesday (I have no good reason to say this but were running with it anyway).
Let the cake set in the fridge for at least 4 hours. Frost the cake with Cool Whip and throw however many strawberries you have left on top and serve.
This cake turned out really well, even though it wasn’t exactly the way it was supposed to be. To be honest I can’t remember eating this kind of cake before so I don’t know how it was supposed to taste. I don’t think you can screw up strawberries, Cool Whip, and Angel food cake. Maybe next time I’ll try and fix all of the things I screwed up this time, or maybe I’ll leave it just the way it is.
